INGREDIENTS

 
Organic Dark Chocolate (check to make sure it doesn’t contain milk – I used Green&Blacks) x 1 cup
1/4 cup Coconut Cream
Teaspoon of Peppermint Extract
Teaspoon of Vanilla Extract
Some raw cacao or dark cocoa powder for dusting! (I also used desiccated coconut for some of the truffles!)

 

METHOD

 

Melt the chocolate in a pan til it’s smooth.
Remove Coconut cream from packet into a bowl (we don’t want the watery milk – only the thick cream)
Take chocolate off heat – add coconut cream, peppermint and vanilla to form a smooth thick liquid.
Place in the fridge to set for a few hours.
Roll into truffle shaped balls and roll in the cocoa powder or coconut.
Place truffles on a plate and leave overnight in the freezer. (Freezer should be on low temperature – you don’t want the truffles to turn into blocks!)

NOTES

 
These delicious peppermint truffles are dairy free, gluten free and sugar free! Amazing right? They are still a treat though…. (I told myself this after I managed to wolf down 5 in one day!) They are SO good!! Don’t forget to share your creations with me on Facebook and Instagram <3
